I bought this at a garage sale this morning with, what I thought was an instruction manual - turns out to be an advertising brochure. I have no idea how to use this dehydrator - nor any other come to the point. Are there any rules that apply to all dehydrators or do I need the exact manual? If so, and if anyone out there has the manual for a K-Tel Food Dehydrator Model: KN128D and would be so kind as to photocopy and send to me, I'd be over the moon.

I would of course, pay any costs involved I have googled in vain - no links for a download and I know K-Tel went out of business some time ago, so it's no use me contacting them. I just got books out the library for time but these days you would just google dehydrator recipes. I make heaps of rollups from fruit purees.I put plastic wrap around the rack usually just 2 bits each.Then spread a thin layer of fruit on it.Normally I start it in the morning and they will be done by afternoon depending on how many I made,the weather and if I kept rotating the trays ie bottome to top as the bottom dries first. I set mine up in my sunny kitchen conservatory.I would never use it when I was not around as mine is over 25yrs.I also put mine on a board as I dont want to ruin my nice wooden table with heat.

Soon I will have heaps of plums which I prick all over and fill the trays with.I dont time these just see how they go.Normally I start them off and when its really hot I turn of the dehydrator and let the sun do its work then finish off when its cooler at night. How do you guage what temperature you're achieving when all you have is an ON/OFF switch, I'd be interested to learn how you get around this please.

You've been more than helpful and as my brother arrived this afternoon with a bucket full of apricots from his tree, I'll read abit more (with fingers crossed) then get stuck in tomorrow - that's if we haven't devoured all the apricots beforehand! You will soon get used to it.I dont lknow the temperature and as I mainly dry stuff in summer and in a warm conservatory reckon it must be OK.Apricots may discolour and sometimes people prepare them and place in acidulated water ie with lemon juice,vinegar or vit c tablets. I find doing them with stones in is the lazy way even if it look odd with the gaps at first in the trays.They soon flatten down and you can pop the stones out later easily and with less mess. I do love Jerky too.I just make a marinade with soy sauce or whatever I have on hand and use beef snitzel soaked overnight then drained,cut into long slices so you can chew bit by bit.(Take out as much fat as you can so it doesnt go rancid) For perfect storage I store larger ammounts in the freezer and just pull out a weeks supply and put it in the fridge due to having a hot house and humidity.
